1. Vegetable Stir-fry

A vegetable stir-fry served on top of brown rice or another whole grain (I like quinoa) is a quick, easy and healthy meatless meal idea. Use a store-bought stir-fry sauce or marinade, or, try a combination of soy sauce, sesame oil, and vinegar. For the kids, cook up some Asian noodles to mix in with the stir-fry. Try adding unusual ingredients, such as diced pineapple, mandarin oranges or slivered almonds to keep it interesting, and don't forget a protein source such as tofu, seitan or a store-bought meat substitute for some chewy and hearty texture.
